Mini Lucy™ Apple Cheesecakes

The perfect easy no-bake holiday dessert perfectly-portioned for deliciousness. These are glowy, sparkly, simple, and will give you all the holiday vibes! My kids adored these. Members of our fam – vegan and very much non-vegan 😂 – SWALLOWED. THESE. UP. They couldn’t stop talking about them. I think you won’t be able to either.

✨Gluten Free by default
✨Dairy Free (of course because they are vegan, but worth noting)
✨Use vanilla bean paste, but if you can’t find it, just pure vanilla extract will work
✨Few ingredients and FULL of FLAVOR
✨ If you don’t have a mini cheesecake tin, use a lined muffin tin

Ingredients

Topping: 

  • vegan caramel
  • 2 Lucy Glo Apples, chopped
  • edible gold flakes

Cheesecake:  

  • 1 (8 ounce) container dairy-free cream cheese, room temperature
  • 1 1/2 teaspoons vanilla bean paste
  • 2 1/2 cups coconut whipped cream
  • 2 tablespoons pure maple syrup

Crust: 

  • 1 1/2 cup pecans
  • 3 tablespoons vegan butter
  • 3 tablespoons maple syrup

Instructions

  1. Preheat oven to 400.
  2. Place the ingredients for the crust into a mini food processor and blend until those pecans are chopped finely. Divide the mixture among a 12 count mini cheesecake tin. Push the crust layer down so it’s packed tight. Bake for 5 to 7 minutes. Remove and let cool completely. (Place in the refrigerator or freezer for faster cooling).
  3. Make filling by blending cream cheese until it’s nice and fluffy. Fold in coco whip, vanilla bean paste, and maple syrup. Fill each little cheesecake tin to the top. Freeze until set.
  4. Once cheesecakes are frozen, gently remove them and spread a small layer of caramel on top. Pile on diced apples. Drizzle a little more caramel. Sprinkle on edible gold or glitter. Enjoy!!!!!
