Halloween Lucy™ Apple Mummies

Ingredients

  • 2-3 Lucy™ Rose or Lucy™ Glo Apples
  • 1 cup white chocolate melting chips
  • Candied eyeballs
  • 8 – 10 popsicle sticks

Method

  1. Carefully slice the apples into ½ inch slices vertically. At the bottom of each apple slice, make a little slit using a small paring knife.  Gently insert each popsicle stick into that slit, being careful to keep the apple in-tact. (PS – even if you don’t, they still taste just as good!
  2. Melt white chips in a bowl in the microwave in 30 second intervals, stirring chips in between, to make certain they don’t burn. If you are using stevia-sweetened white chips, add 2 teaspoons coconut oil to them prior to heating to help them melt easily.
  3. Lay apple slices out on a flat surface covered in parchment paper. Using a spoon, drizzle melted white chocolate across each apple slice in zig-zag patters resembling a mummy. Add two candied eyeballs on each. Repeat for all of the slices.
  4. Refrigerate for just a few minutes until set. Serve and enjoy!
