Baked Feta with Lucy™ Apple and Figs

This Baked Feta with Lucy™ Glo Apples and Figs is a warm, golden dish that captures everything we love about fall. The Lucy™ Glo apple, with its signature rosy flesh and perfectly balanced sweet-tart flavor, steals the show, adding a bright, juicy contrast to the creamy baked feta and caramelized mission figs. As it bakes, the apples soften slightly, releasing their natural aroma and deepening the dish’s color and flavor. Drizzled with honey, olive oil, and a touch of chili crisp for subtle heat, it’s a stunning blend of sweet, savory, and spicy. Topped with toasted pumpkin seeds and fresh herbs, this recipe isn’t just an appetizer, it’s a conversation piece that celebrates the beauty and versatility of the Lucy™ Glo apple.

Ingredients

  • 1 Lucy™ Glo Apple, shredded (or Lucy™ Rose; I used Glo for this recipe)
  • 8 oz block of feta cheese
  • 8 Mission figs, halved
  • 4 tbsp olive oil, divided
  • 2 tbsp honey
  • Fresh cracked pepper
  • Pinch of salt
  • Fresh thyme
  • 2 fresh rosemary sprigs
  • 1–2 tbsp chili crisp
  • 1/4 cup pumpkin seeds

Directions

  1. Preheat oven to 425°F (220°C).
  2. Drizzle 2 tbsp olive oil in the bottom of a stoneware dish or another oven-safe, high-sided piece.
  3. Shred one full Lucy Glo apple and spread it evenly in the bottom of the dish.
  4. Place the block of feta on top of the shredded apple.
  5. Arrange the halved figs (flesh side up) around the feta so they caramelize in the oven.
  6. Sprinkle with thyme, salt, and pepper.
  7. Add the rosemary sprigs along the sides of the dish.
  8. Scoop on the chili crisp, scatter the pumpkin seeds, and drizzle with honey and the remaining olive oil.
  9. Bake for 20 minutes, until the feta is soft and the figs are slightly caramelized.
  10. Serve warm with fresh sliced Lucy™ Glo or Lucy™ Rose apples, crackers, or crostinis.

Serving Suggestion

The fresh apple slices make an excellent grain-free alternative to crackers, offering a crisp, refreshing balance to the rich, savory baked feta.
