2-Ingredient Sliced Lucy™ Apple Protein Pancakes
These 2-Ingredient Lucy™ Apple Protein Pancakes are a simple, wholesome breakfast that tastes like a treat. Slices of Lucy™ apples are layered into fluffy and protein-rich pancakes, then topped with candied almonds for the perfect balance of texture and flavor. Perfect for busy mornings or a cozy weekend brunch!
Ingredients
- 1 cup prepped high-protein pancake batter
- 1 Lucy™ Rose or Lucy™ Glo Apple

Optional toppings:
- Raw almonds
- pure maple syrup
- ground cinnamon
Directions
- Heat a pancake griddle to medium and coat in non-stick cooking spray.
- Slice apple into rounds ¼ inch thick. Remove any seeds.

- Place batter-dipped apple slices on the griddle one at a time. Flip after about 1-2 minutes and cook on the other side for 1-2 minutes more. Repeat until all batter-dipped slices have been cooked.

- For topping, heat almonds in the oven until toasted. Remove and drizzle with pure maple syrup and a sprinkle of ground cinnamon.
- Stack pancakes high, and sprinkle with almonds or a drizzle of maple syrup if desired. Yummy!

Pro-tip: 2 ingredient apple pancakes can be prepped ahead and enjoyed as an on-the-go snack. Spread with almond butter for another protein perk!
