Lucy™ Apple Chopped Salad

Lucy™ Rose Apple Chopped Salad is a charming blend of fresh and vibrant flavors that make every bite a crisp and refreshing experience. This salad features crunchy brussels sprouts, candied pecans, and sweet cranberries, all perfectly complemented by the Lucy™ apple, which are known for their unique rosy hue and sweet, crisp texture. The combination of savory and sweet elements, along with a light vinaigrette dressing, creates a harmonious balance that tantalizes the taste buds. Whether enjoyed as a healthy lunch option or a dinner side dish, Lucy™ Rose Apple Chopped Salad is a delightful culinary journey that leaves a lasting impression.

Ingredients:

  • 2 cups of shredded brussels sprouts
  • 2 cups of an arugula spinach blend torn into small pieces
  • 3 Lucy™ Rose apples, diced
  • ½ cup of diced red onion
  • 1 cup of candied pecans
  • ½ cup of dried cranberries

Combine all the above ingredients to a large serving bowl and generously drizzle with the maple Dijon dressing below.

  • 5.3oz container of plain Greek yogurt
  • 2 tbsp. Dijon mustard
  • 4 tbsp. maple syrup
  • 2 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ¼ tsp. white pepper
  • Pinch of salt

This salad can be enjoyed right away, or you can let it sit for an hour to overnight for even more flavor infusion.

Other additions: Pumpkin seeds, goat cheese or blue cheese crumbles.
