Lucy™ Apple & Whipped Feta Crostini

Ingredients:

  • 1 baguette, sliced
  • 1 Lucy Rose or Lucy Glo apple, thinly sliced
  • Oil for brushing crostini
  • 6 oz feta crumbles
  • 6 oz cream cheese
  • 6 oz fig preserves
  • 1 tbsp fresh thyme, for sprinkling
  • Hot honey, for drizzling

Instructions:
Prepare the Crostini: Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and lightly brush each side with oil. Toast in the oven until golden brown and crisp, about 8-10 minutes, flipping halfway.

Make the Whipped Feta & Fig Spread: In a food processor, combine feta crumbles, cream cheese, and fig preserves. Blend until smooth and creamy.

Assemble: Pipe or spread a generous layer of whipped feta mixture onto each toasted crostini. Place a thin apple slice diagonally over the feta.

Garnish: Sprinkle with fresh thyme leaves and finish with a drizzle of hot honey.
Serve: Enjoy these crostini’s fresh as an appetizer or delightful snack! Save the extra whipped feta mixture and serve as a dip!
