These Lucy Apple Truffles are tiny jewel-like bites that dazzle both the eyes and the taste buds. Using the naturally red-fleshed Lucy Rose and Lucy Glo apples, each round bursts with vibrant color that shines beautifully against the rich milk chocolate. These miniature truffles are as customizable as they are stunning—perfect for when you want to make something that’s both elegant and fun.

Ingredients:
• 1 Lucy Rose apple
• 1 Lucy Glo apple
• 1 bag melting caramels
• 1 bag melting milk chocolate wafers
• 1 bag white chocolate melting wafers
• Cocoa nibs (for topping)
• Crushed almonds (for topping)
• Toothpicks (for dipping)

Tools:
• Melon baller
• Piping bag (for caramel)
• Parchment paper
• Toothpicks
• Tray for chilling

Instructions

1. Using a melon baller, scoop small, round pieces from both the Lucy Rose and Lucy Glo apples.

2. Pierce each apple round with a toothpick for easy dipping.

3. Melt the milk chocolate wafers according to package directions.

4. Dip each apple round fully into the melted milk chocolate and place onto a parchment-lined tray.

5. Chill the dipped apple rounds in the refrigerator until the chocolate is firm.

6. Once set, customize your truffles however you like:

Option 1: Drizzle melted white chocolate over the truffles using a fork and roll in cocoa nibs.
Option 2: Pipe on melted (slightly cooled) caramel using a piping bag, then roll in crushed almonds.

7. Allow the toppings to set completely before serving or storing.

8. Enjoy! Each truffle can be uniquely decorated to suit your personal taste or occasion.

These Lucy Apple Truffles are fully customizable—switch up your toppings, use different types of chocolate, or experiment with nuts and drizzles to make them uniquely yours!
